Micah's Baba Recipe

Here is a recipe for Baba from our Farm Manager from 2017. Sorry, there is no pictures but believe us it is delicious! A perfect meal to enjoy some of our local eggplant!


Baba Recipe

  • 1 large eggplant (or 2 med/small)

  • 1 lemon (juiced)

  • 1-2 cloves garlic

  • 1 tbl spoon tahini (is a paste made from sesame seeds and is a staple in many cuisines)

  • 1 bunch cilantro (to taste, usually 1 tbl spoon)

  • Salt, pepper, cumin (to taste)

  • Olive oil (for roasting)

  1. Slice eggplant into cubes for roasting (peel before for ease)

  2. Toss in oil ~ add salt & pepper

  3. Roast eggplant at 400°F for 20 -30 minutes

  4. In a food processor combine lemon juice, garlic & tahini; pulse lightly

  5. Remove eggplant & allow 2 minutes for eggplant to rest; add a pinch of salt to help retain moisture

  6. Add roasted eggplant to food processor & combine all ingredients until smooth. * Add cilantro (1 tbl spoon) & cumin, salt, pepper to taste

ENJOY! with warm pita!
