Here is a recipe for Baba from our Farm Manager from 2017. Sorry, there is no pictures but believe us it is delicious! A perfect meal to enjoy some of our local eggplant!
1 large eggplant (or 2 med/small)
1 lemon (juiced)
1-2 cloves garlic
1 tbl spoon tahini (is a paste made from sesame seeds and is a staple in many cuisines)
1 bunch cilantro (to taste, usually 1 tbl spoon)
Salt, pepper, cumin (to taste)
Olive oil (for roasting)
Slice eggplant into cubes for roasting (peel before for ease)
Toss in oil ~ add salt & pepper
Roast eggplant at 400°F for 20 -30 minutes
In a food processor combine lemon juice, garlic & tahini; pulse lightly
Remove eggplant & allow 2 minutes for eggplant to rest; add a pinch of salt to help retain moisture
Add roasted eggplant to food processor & combine all ingredients until smooth. * Add cilantro (1 tbl spoon) & cumin, salt, pepper to taste
ENJOY! with warm pita!
